A Fabulous Fall Feast



I have never been a big fan of meatloaf but after discovering this recipie and customizing it into a calorie friendly feast, I am now a fanatic.

Cran-Apple Turkey Meatloaf (It's like Thanksgiving in Your Mouth)

-1 lb 99% Fat-Free Jennie O'Ground Turkey (480 cals)
-1 1/2 pieces Whole Wheat Bread (approx. 150 cals depending on bread choice)
-1/3 cup Trader Joe's Cranberry Apple Butter (100 cals)
-1/4 cup diced celery (0)
-1/4 cup diced onion/shallot/garlic mix (0)
-1 egg (70 cals)
-Sprinkle salt and pepper (0)

Total Loaf Count= 200 calories a serving (800 total, split 4 ways)

Pre-heat oven to 350 degrees. Beat the egg seperately. Combine all ingredients in a large bowl, kneading and mixing with your hands. Place mixture in an ungreased loaf pan and cook for about 50 minutes. Use remaining Cran-Apple Sauce to drizzle over.


As an appetizer, I was thrilled by Trader Joe's Butternut Squash Soup. It is low-cal, low-sugar and only 90 calories a cup with 3 grams of fiber.

A great colorful side dish is green and yellow beens. Trader Joe's sells them pre-cleaned and pre-cut and a serving of 10 long beans is a mere 20 calories!

Ta-da! An easy, healthy Fall meal for only 310 calories.
