As promised I have a recipe courtesy of my favorite vegetarian, Lindsay Miller, for a fabulous Mock Mashed Potato side dish. Now this delicious spud substitute doesn't taste exactly like your mom's turkey dinner staple but I guarantee you, it tastes great. You will also love the fact that you're ditching all that starch.
Mock-Mashed
- 1 tbs. Brummel and Brown
- 1/8 cup Skim Milk
-dash of Garlic Powder
-16 oz Bag of Frozen Cauliflower
1. Begin by steaming the frozen cauliflower in a covered pot with about a 1/3 cup of water. You can also throw it in a bowl in the microwave for even less work.
2. Steam the veggies until they are extremely overcooked. You want them to be mushy like potatoes get. If you're cooking them on the stove top though, remember to keep an eye on them so they don't burn. Add more water throughout the process if necessary. This should take about 10 minutes.
3. Mash the cauliflower in a medium sized bowl as much as you possibly can.
4. Add Brummel and Brown, milk, and garlic. (If you want more flavor add extra butter or garlic)
5. Use a beater to combine everything. If for some reason the cauliflower isn't breaking down enough, pop it back in the microwave for a few more minutes. Or if you want it a little crunchy (mine was) it can be more of a mock hash brown mixture :)
6. Serve on the side of a healthy meal. I chose steamed spinach and baked salmon.
