Keeping it Healthy at Homecoming

Ahhh Homecoming...a time for friends, fond memories, and most importantly FOOD. But it doesn't have to be all fattening.

This past weekend was the University of Arizona's homecoming (Go Cats!), and I decided to start the festivities off right with a healthy but hearty breakfast with my homies.


Scrambles are the best breakfast meal for a group, scrumptious but easy to make.


My friend Melissa helped make ours with red and green bell peppers, onions, chicken apple sausage, mushrooms, and obviously eggs.


Sack em' Scramble

11 Egg Whites (187 cals)
3 Eggs (210 cals)
4 Trader Joe's Chicken Apple Sausages sliced (420 cals)
1/2 c. Red Pepper diced (15 cals)
1/2 c. Green Pepper diced (15 cals)
1/4 c. Onion diced (10 cals)
1/4 c. Mushrooms sliced(10 cals)


Spray skillet with Pam and saute veggies still soft. Add peppers and cook another 2 minutes. Add eggs and whites and cook through.

Total: 145 calories each, serves 6


We also attempted making Butternut Squash Hash Browns based on a recipe I saw online, but I didn't really remember the directions.

I think I must have missed a step or something because instead of crispy hash browns we ended up with mashed browns. But it was no sweat off my back, they stilled tasted bomb!


Butternut Mashed Browns

1 large Butternut Squash

Peel butternut squash. Use cheese grater to shred about 6 cups of squash. Add salt. Spray skillet with Pam and saute till cooked and browned.

Total: 80 calories each, serves 6.
