2 Good 2 Be True 2-Step Cookies

These cookies are so amazing you will not believe they are less than 100 calories. And the best part is that with only two ingredients, they are by far the easiest baked goods I’ve ever made.

My co-workers loved them!

Pumpkin Pie Cookies
adapted from recipe on “Peanut Butter Fingers”

As if baking with boxed desserts wasn’t easy enough, this recipe requires only one extra ingredient, pumpkin puree.

Ingredients:

-Betty Crocker Super Moist Carrot Cake
-15 oz Pumpkin Puree

Directions:

Pre-heat oven to 350.


1. Mix the two ingredients.


2. Spray cookie sheet with Pam and drop dollops of mixture on to make approximately 24 cookies.


3. Bake for 15 minutes.


Total calories: 90 each, makes 24.

These cookies are so moist, they taste just like cake. But since you leave out oil and eggs, you save a ton of calories!


For a little more pizazz you can make a fast frosting with fat-free cream cheese and sugar (or sugar substitute like Splenda or Stevia).

You can implement the same idea behind these babies to just about any boxed cake. Simply mix the cake with an oil substitute (natural applesauce, mashed bananas, prune puree), and let the experimenting begin!
