Weigh-Low: Lentil Beet Quesadilla

I know, it sounds a little weird, or so says my close-food-minded beau. But hear me out.

Beets and mozzarella cheese are bomb together...chewy, cheesy, sweet, and savory. Ok, so you get that part. Now throw in some lentils for the protein factor (their bland flavor will not mess with the aforementioned combo), and you got yourself a full-fledged meal.

This recipe is quick and easy for lunch, a mid-day snack, or a great appetizer at your next vegan cocktail party.

Lentil Beet Quesadilla
Ingredients:

Low-Carb Tortillas (Whole Foods)

 Lentils (Trader Joes)

Beets (Trader Joes) 
 
Shredded Almond Cheese (Whole Foods)

Directions:

1. Spray a pan with Pam and set stove to medium heat.

2. Stack a tortilla (90 calories) with 1/4 cup lentils (60), 2 sliced beets (40),  and an ounce of shredded almond cheese (60).
3. Set on the heated pan and top with another tortilla (90).

4. Grill each side for about 3-5 minutes. Keep an eye on it so it doesn't burn.

5. Slice and serve!
Total Calories: 340 for the whole dilla.

Serve with a crunchy, healthy veggie on the side like edamame (120 cals for a 1/2 cup, Trader Joes).
