Good Girl Pizza With a Bad Girl Taste




Everyone loves pizza but as most savvy dieters know, eating pizza will give you a paunch! But thanks to my friend Cristina Peerenboom, creator of the Hollywood fitness plan "The Brink Effect," you can now add this healthy version of the high cal favorite to your meal plan.

Peerenboom's "Pizza" is low carb, low sodium, whole grain, gluten free, fat free, and low cal (250 calories for four pizzas). Check it out...

Ingredients (All can be found at Trader Joe's)
-Tj's blue corn tortillas
-Tj's low sodium marinara sauce
-Bagged baby arugula
-1 zucchini
-1 yellow squash
-1 bell pepper
-Extra virgin olive oil
-Spices (California garlic powder, 21 seasoning salute, black pepper)

Directions

1. Preheat oven to 400 degrees.
2. Chop/slice zucchini, squash, and bell pepper.
3. Saute on stove top on medium for 5-10 minutes with a splash of olive oil and a ton of garlic powder, 21 seasoning salute and pepper.
4. Place 4 tortillas on cookie sheet. Spread a dollop of marinara on each.
5. Spread a handful of arugula on top of marinara.
6. Place sauteed veggies on top of arugula, drizzle with olive oil, and pop in the oven.
7. Cook for 10-15 minutes, until the "crust" is slightly crispy.

If this adaption to the classic is a little too tame for you, sprinkle a little Kraft Fat-Free Mozzarella on top, (45 cal per 1/4 cup).
