Today is National Margarita Day!
But that doesn't mean you have to ruin your model body by chasing your tequila with Taco Bell. Celebrate by whipping up this south-of-the-border fishy feast for next to nothing calories, courtesy of my friend Cristina Peerenboom, creator of "The Brink Effect."
Grilled Salmon Tacos with Baja Sauce
Ingredients:
3 oz grilled wild salmon (150 calories)
2 Ezekiel Sprouted corn tortillas (120 cal)
Chopped green cabbage
Sauce:
1/4 c plain nonfat yogurt
1/2 squeezed lemon
handful of finely chopped cilantro
splash of olive oil
splash of apple cider vinegar
Warm tortillas in the microwave or on the stove. Combine all the sauce ingredients in a small bowl. Divide salmon between the two tortillas. Top with cabbage and sauce. Total recipe is only 300 calories!
