The waiters at Olive Garden will be going into overtime tonight! Because besides being Superbowl XLIV, today is "National Fettuccine Alfredo Day"!
So why don't you sideline the nachos and brewskis, and tackle a healthy noodle alternative in celebration of this grandiose occasion.
Although most Fettuccine Alfredo recipes are loaded with carbs and fat, internet sweetheart "Hungry Girl" has provided readers with a low-carb guilt-free alternative:
Shrimptastic Fettuccine Hungry Girlfredo!
This delightful recipe has 145 calories, 4.5 grams fat, and 13 carbs, 5.5 of which are from fiber!
Ingredients:
5 medium cooked shrimp
1 package Tofu Shirataki Fettuccine Shaped Tofu Noodles
1/3 cup cooked chopped broccoli
1 wedge of The Laughing Cow Light Cheese
1 teaspoon fat free sour cream
2 teaspoons Kraft Reduced Fat Parmesan Cheese
salt & pepper (if desired)
Instructions:
Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses, sour cream and broccoli. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Top with cooked shrimp. Add salt and pepper to taste.
If you have guests over for the game, just multiply the ingredients by the number of your teammates. This quick, easy "Superbowl" is sure to be a crowd-pleaser.
*Note: The noodles can usually be found in the refrigerated isles next to other meatless products. Ralphs, Whole Foods, and Low-Carb-U are just a few places I have found them!
