Just because everyone else is cramming their faces with fists full of nachos and sweet and sour laced Slurpee's doesn't mean you have to sacrifice your slender physique for fun!
Try out my healthy Cinco De Mayo menu to stay slim during this South-of-the-Border celebration.
Slimming Chimis (My version of the fried favorite made with only fabulous fixings)
-La Tortilla Factory "Low Carb, High Fiber Tortillas" in Whole Wheat (80 cals, 12 grams fiber, 8 grams protein)
-1/2 cup low sodium Black Beans (100 cals)
-1/4 cup Salsa (Any brand about 20 cals)
-4 oz Chicken (127 cals)
Directions:
1. Set oven to 400 F.
2. Cube the chicken and saute it in a skillet with the beans and salsa.
3. Once chicken is almost completely cooked through, drain any excess liquid and pour mixture into a tortilla.
4. Wrap up like a burrito tucking both sides in.
5. Lightly mist all sides of the burrito with cooking spray.
6. Place on baking sheet or in pan and cook for 10 minutes or until outside of burrito becomes light brown and crispy.
7. Top with lettuce, fat free sour cream, and avocado. Enjoy!
Total Cal Count: 327 (minus fixings)
Keeping It Holy Guacamole
-2 Avocados (640 cals, its all healthy though, no worries)
-1/4 cup Salsa (20 cals)
-1/4 cup Fat-Free Sour Cream (60 cals)
-Squirt of Lemon
-Dash of Garlic Powder
Directions:
1. Mash all contents together and serve with a sinless side like carrots or a toasted whole wheat pita cut into triangles to resemble chips.
Total Cal for the Dip: 180 (Serves 4)
Sexy Senorita Shrimp Ceviche
-1 lb Shrimp cooked or raw (480 cals)
-2 diced Tomatoes (44 cals)
-1 diced Cucumber (25 cals)
-1 diced Avocado (320 cals)
-Lemon/Lime Juice
-Cilantro to garnish
Directions:
1. If you bought raw shrimp, boil it till it turns pink, then chill in cool water.
2. Combine the veggies with the cooled shrimp (diced) in a medium sized bowl and cover with half lemon juice/half lime juice till entire mixture is coated. Sprinkle lightly with salt
3. Chill in the refrigerator until ready to serve.
4. Distribute mixture between martini glasses and garnish with cilantro. You can serve with toated pita chips or wrap in Trader Joe's Blue Corn Tortillas (60 cals).
Total Cals: 145 (Serves 6)
Finish off the menu with some low-cal Margarita's using Baja Bob's mixers or make a healthy "mocktail" using 2 parts Diet 7-up, 1 part lime juice, 1 part lemon jucie, dash of Splenda, and ice. Blend it all together and you're half way to Cabo!
