I'm Packing (Pumpkin Butter)

Now that you have all that pumpkin puree, why not share the wealth!

Homemade puree is perfect for making pumpkin butter, a delicious gift to take to Thanksgiving dinner.

Your hostess will be super impressed and you'll have something healthy to slather on your whole wheat roll at the big feast.

Better N' Pumpkin Butter

29 oz. Pumpkin Puree (canned or fresh)
3/4 C. Natural Applesauce
3 oz. Truvia (or other sugar substitute)
1 Tbs. Cinnamon
1 1/2 Tsp. Ginger
1 Tsp. Nutmeg
Squirt of Lemon Juice


Directions:


1. Combine all the ingredients (except lemon juice) in a large pot and bring to a boil.


2. Turn down to low flame, cover, and continue cooking for 30-40 minutes, stirring frequently.

3. Let butter cool then add splash of lemon juice.


4. Transfer to pretty glass jars, and decorate with ribbon and a Thanksgiving greeting.

Total Calories: About 8 per ounce.


Spread the butter over rolls, swirl into oatmeal, glaze pastries, or add to smoothies. Or give it away to a deserving fellow dieter.
