Eat Your Heart Out This Valentine's Day


Just because all the uncreative cupids out there will be paying $200+ on Monday for an overpriced and over-saturated fat feast, doesn't mean you have to sacrifice your diet to do something special.

This V-day treat your honey to a heartfelt homemade dinner that's as nutritious as it is tasty.

Here's a menu I've created which I'll be making for my man. I haven't made it before, so these pics are generic. But I will post the final product on Monday morning (we're celebrating Sunday), so you can see the results if you choose to follow suit.

For those afraid to attempt a full dinner, don't fret. The ingredient list is short, the directions are easy, and on this day of all-it's the thought that counts!


Filet Mignon w/Lover's Glaze

2 4-6 oz. Tenderloin filets (200-300)
1/2 C. Red Wine (30)
Salt and Pepper

1. Season filets with salt, peppe, and any herbs you like. Trim any fat.
2. Spray a skillet with Pam and heat over medium high. Cook filets for about 4 minutes per side or until they reach desired temperature(135 to 145 degrees inside for medium).
3. Remove steaks and return pan to heat. Simmer wine in pan until it reduces to a sauce.
4. Drizzle filets with glaze.

Calories: 230 or 330 for 4 or 6 oz

Steam-y Spinach

8 oz Frozen chopped spinach (25)
2 Laughing Cow Light Swiss Wedges (35)
2 Tbs. Reduced Fat Parmesan (20)

1. Heat frozen spinach in a saucepan over medium high heat until thoroughly cooked.
2. Add swiss and stir until mixed throughout.
3. Divide on plates and top with a tbs. each of parm.

Calories: 80 for half


Sweetheart Mashed Potatoes

1 Sweet Potato (50)
1 C. Butternut Squash (40)
1/4 C. Light Unsweetened Almond Milk (5)
1 Tbs. Brown and Brummel Spread (22)
Garlic Powder, Salt, Pepper

1. Peel sweet potato and butternut squash and cut into chunks.
2. Fill pot with water and bring to a boil. Boil potato and squash for 7-10 minutes or until soft.
3. Mash the veggies with the milk and buttery spread.
4. Add seasonings to taste.

Calories: 117 for half

Make the meal together for a romantic activity while you share the rest of that red wine, and enjoy the intimacy of NOT being in a stuffy restaurant.

Light some candles and serve in the comfort of your home or, if the weather permits, take it outdoors for a night under the stars.

Total Calories for this meal: 430 (530 for your man since he'll probably do a 6 oz)
